Faux Tatoes & GravyFaux Tatoes
Cook cauliflower until well done. Actually, the frozen works best.
Put in a deep bowl or food processor.
Add some butter, salt & pepper and a little heavy whipping cream.
Stir in a little cream cheese or sour cream if desired.
Whip until the consistency of mashed potatoes.
Sprinkle a little shredded cheese on top if not using gravy (recipe follows)
A LC gravy (made with chicken or beef broth, & cream....then reduced) is good on this.
Add some sauteed mushrooms to the gravy if desired. Can be thickened further with xanthum gum.
