Rosemary Sun-Dried Tomato Scones

Rosemary Sun-Dried Tomato Scones  (makes 6 scones)

2 cups almond meal
2 tablespoons coconut flour  (I didn't have, so used flax meal)
1 teaspoon baking soda
1/2 teaspoon sea salt
1/4 cup shredded Romano cheese
1 teaspoon dried Rosemary
1 teaspoon dried Oregano
2 tablespoons sun-dried tomatoes (soaked in oil), finely chopped
1/4 cup extra-virgin olive oil
1 large egg

Preheat oven to 350 F

In bowl, mix together dry ingredients.  I mixed the sun dried tomatoes, olive oil and egg in a separate bowl, then combined both together.

Spoon onto parchment paper-lined baking sheet.  Flatten to approx. 3/4 inch thickness.  (I shaped them with my hands, and patted them flat.) You may sprinkle with a little more grated Romano cheese, parsley flakes, sea salt if desired.  Watch the salt, I overdid it.

Bake for 30 minutes.  They will really perfume the whole house when they are done.
